RICE PUDDING - 1

Rinse the rice in a strainer with lots of cold water.  Leave to swell  up.  Bring the milk to a boil with the sugar in a large saucepan.  Add the rice and simmer for about 50 minutes.   When the rice is cooked, take it off the heat to cool.  Add the butter and stir.  Beat the cr¸me fra”che until firm and fold into the cold rice.  Also fold in the ground almonds and the single almond.  Place the rice in a serving dish and refrigerate.  Before serving, sprinkle with a little cherry or raspberry liquor.
